So we had a great beer tasting this month but due to popular demand... we HAVE to have a wine tasting!

With over 70 wineries opening in the last 10 year, Chile has become a world player in the wine world.  As the 7th largest exporter and the 9th largest producer, Chile best varietals include Cabernet, Merlot and Carmenere.

PEPPER INFUSED CHERRY PROSECCO POPS

3 cups unsweetened white grape juice
1 Tbs black pepper corns
1 cup prosecco
3 Tbs lemon juice
3 cups pitted cherries, chopped into a chunky puree

Bring white grape juice to a boil with peppercorns then turn off heat.  Let sit for 8 hours to infuse flavor.  Combine pepper infused grape juice (discard peppercorns), prosecco and lemon juice in a pourable container.  Equally distribute cherry puree in popsicle molds then gently pour liquid over.  Freeze for at least 12 hours.
